Cooking

I really enjoy cooking. These are some of the recipes I like and make repeatedly, some things I plan on trying to make, and some that I'm developing myself.

  • Butter Chicken

My kids wanted me to make Butter Chicken for dinner one evening. I spent some time refining the recipe with ChatGPT. My daughter made naan from scratch to go with it!

  • Chicken Rice

This is my own recipe for Chicken Rice, a favorite dish in my household. One of the best things about it is that it only uses 3 dishes to cook it!

  • Chocolate Chip Cookies

My family has a good pedigree for chocolate chip cookies. My daughter's version has won multiple medals at the LA County Fair!

  • Coffee Toffee Ice Cream

Rich and creamy ice cream infused with coffee and studded with crunchy toffee pieces.

  • Crispy Chicken Thighs on Kale

One of my go-to meals is crispy-skinned chicken thighs on a bed of kale. It's a fantastic hands-off weeknight meal that only really requires a cast iron skillet.

  • Drunken Noodles (Pad Kee Mao)

A flavorful Thai noodle dish featuring wide rice noodles stir-fried with basil, vegetables, and a savory sauce.

  • Fried Eggplant

I went to Japan House for an interesting discussion about cooking in one of the monasteries and had the most amazing fried eggplant. I tracked down the chef, and using my pidgin Japanese, got him to write down the recipe for me. I feel that he was both flattered and amused.

  • Jalapeño Bacon Mac & Cheese

A rich and indulgent mac and cheese with a spicy kick from jalapeños and the smoky goodness of bacon.

  • Meaty Meat Chili

A hearty and flavorful chili packed with tender beef, bold spices, and a hint of dark beer. Perfect for cold days or feeding a crowd.

  • Milk Bread

  • Peanut Butter and Nutella Swirl Sandwich Shortbread Cookies

Rich peanut butter shortbread with a decadent Nutella swirl, perfect for any dessert lover.
